Conventional road cars commonly use a wet sump, meaning the majority of the engine oil is stored within the oil pan itself, whilst this is fine for day to day use however when on-track cars are subject to greater G-forces. When under this force the factory oil pickup may not be able to draw oil from the pan to the oil resevoir, leading to oil starvation, and vital engine components can receive excessive wear. The benefit of a baffled sump is the limiting factor it introduces when the oil is sloshing around, essentially trapping oil in the now smaller area where the oil pickup is able to draw without starving the system at all.
